Yunnie’s Tips

  • When washing the noodles, rub them between your hands like you’re hand-washing laundry for 1-2 minutes. This removes excess starch from the noodles.
  • If you don’t have gochugaru, you can skip it, or add a pinch of red pepper flakes for a similar gentle heat.
  • Don’t skip the kimchi. A bite of kimchi on the side makes the noodles taste even better.

From Yunnie’s Table

Ganjang guksu was one of those everyday meals in our house. My mom would make it for a quick weekend lunch when we hadn’t gone grocery shopping or it was too hot to cook.

When I first moved to the U.S. as a student, I didn’t have a car, so I could only shop at the regular grocery store within walking distance. Whenever I missed Korean food, I made ganjang guksu because I could find everything I needed there.

I still make it for the same reasons. It’s easy, affordable, and familiar. Maybe you have a meal like that, too. Something you make when there’s not much in the fridge and you just need an easy meal.
